Our Story 

The Wild Artichoke was founded in 2000 with a vision to bring exceptional culinary artistry to the community. In 2022, Chef Andrew Joo, a visionary chef with an extraordinary background, took ownership and transformed the restaurant into the pinnacle of modern French gastronomy infused with global influences.

Chef Andrew’s culinary journey began in a home where food was a way of life. Raised by a mother who taught traditional Asian cuisines and a grandmother who prepared desserts for Korea’s royal kitchens, Andrew developed a deep appreciation for tradition and artistry at a young age. He honed his skills at prestigious establishments, including Montage Resort in Laguna Beach, where he mastered modern French techniques, and Roy’s, a Japanese-French fusion restaurant, where he discovered the delicate balance of precision and innovation. His travels across Europe further enriched his perspective, inspiring him to blend tradition with contemporary creativity.

OUR BEGINNINGS
Founded in the year 2000 by Chef James Daquila as an Italian Trattoria, in 2022, Chef Andrew Joo took over and now showcases a 'Modern Japanese French Boutique Bistro.' This establishment offers chef-driven artisanal French European food with an Asian American twist.
